Dr. Kunal Sood, an anesthesiologist and expert in interventional pain management, states that freezing bread serves more purposes than merely extending its shelf life. It may also improve the body's response to it, particularly regarding gut health and blood sugar control. His insights, shared in a video on Instagram dated November 28, have captivated those who frequently store bread in their freezers.

According to Dr. Sood, when bread is frozen and subsequently thawed, a natural process occurs within the starch. This transformation, referred to as retrogradation, converts portions of the starch into resistant starch. This type of starch resembles fiber more than regular starch. It takes longer to digest, which helps maintain consistent blood sugar levels following meals, which is advantageous for those concerned about sudden glucose spikes.

In addition, resistant starch acts as a prebiotic, nourishing beneficial gut bacteria. A robust gut microbiome is essential for digestion, immunity, and overall health. Dr. Sood referenced a study demonstrating that freezing and defrosting white bread could lessen blood sugar spikes after meals by as much as 30% compared to consuming fresh bread. This indicates that a simple act such as freezing bread can yield significant health advantages.

He further asserts that toasting the bread after it has been defrosted enhances the effects of retrogradation. Toasting renders the bread’s structure firmer, allowing the starch to continue functioning as resistant starch. The result is slower digestion, improved glucose control, and better nourishment for gut bacteria. For many homes where bread is a staple food, this knowledge provides a simple route to healthier meals without dramatically altering eating habits.

Many individuals freeze bread to minimize waste, particularly when purchasing multiple loaves or if they live alone. With this newfound understanding, freezing bread transforms from a mere storage tip to a health-empowering practice. Dr. Sood's conclusion is clear: putting bread in the freezer not only prolongs its freshness but also helps your body manage it more effectively. Thawing and toasting yield additional health benefits, making bread gentler on the digestive system and more manageable for blood sugar levels.
